General Session Speaker
David H. Freedman is a celebrated author whose passion is to
look beyond the basics to uncover some of today’s top issues,
most recently obesity. He shared with NACS Show attendees
his belief that by demonizing processed foods — especially
those found in convenience stores — food activists may actu-
ally be doing more harm than good to consumers.
Freedman’s keynote address at the NACS Show’s Opening
General Session was informational and inspirational.
“What I want to talk about today is healthy eating. …This is
going to be a topic that’s going to have a big influence on your
businesses — huge.
And I also think that you are going to have an enormous influence in a very good way on the American public. I think you
guys are going to be the heroes and you’re also going to thrive
on it. And actually make a lot of money on it. So let’s take a look
at how that is going to work.
What’s healthy eating? Don’t we all know? Well, this turns
out to be a really important question. Because we’re right in the
middle of what I would argue maybe, is the greatest crisis the
human race has ever faced. The obesity crisis is an epidemic.”
“I want to introduce to a really impressive young woman I had
the privilege of meeting a few years ago when I had the assignment from The Atlantic to find out what is it that technology is
going to do… to make our foods healthier. I did my research and
I found out that sure enough, there’s a company called the Palo
Alto Food Labs, founded by this young woman.
So I asked this young woman, what is healthy eating? And
she told me, ‘Healthy eating is eating wholesome food. It’s
eating food that hasn’t been poisoned by industry. That hasn’t
come from the giant agricultural farms. That hasn’t been
made in any way or processed by the food industry.’
